Radar Range: Kolaches to Spring from Central Market Ovens


If you’re a fan of kolaches, those sweet, soft, yeasty Czeck bread rolls filled with savory sausage or cheese or sweet fruit jams or poppy seeds, then keep your eyes on Central Market.

The bakery at the Dallas Central Market, on Lovers Lane, is a tireless operation. In addition to their extensive line of artisinal breads and fresh tortillas, Central Market bakes what are hands-down the best bagels in the city. They’re made from scratch every day–4,000 of them– fresh and yeasty, dipped briefly in boiling water then baked, which is the only way to produce a soft, chewy, authentic bagel.

Soon, I’m told, you’ll be able to buy equally wonderful kolaches. On a visit this weekend, I sampled an incredible sausage kolache fresh from the CM ovens. It was about five inches long, twice as big as the typical kolache you buy in West, Texas, the self-styled Kolache Capital of Texas. It was everything you’d hope for in a kolache: a rich, pillowy soft dough encasing a slightly spicy sausage, which I think was a Meyer’s Elgin smoked sausage link.

While CM is tight-lipped on the details, I’ve heard that two types of kolaches–link sausage and cheese–may be available for purchase soon, possibly in the next couple of weeks.
