Chef David Gilbert to Helm Sustenio, Stephan Pyles new San Antonio Restaurant

Stephan Pyles’ new San Antonio restaurant has a name and a chef.

David Gilbert will be running Pyles’ Sustenio, in the new Eilan Hotel, Resort and Spa. Gilbert was named a 2007 Rising Star Chef (starchefs.com) and has cooked in kitchens across Dallas (remember Luqa?), Asia, Africa and Europe. He’s also readying his first cookbook, called Modern American Cuisine, for a spring release.

I love Gilbert and his cooking. He’s an exceptionally talented and personable guy. (Good choice, Mr. Pyles.)

Sustenio at Eilan, 10 and La Cantera Parkway, across from the Rim and only .08 miles from the Shops at La Cantera.
