Garden & Gun Magazine throwing Louisiana-themed cookout at the Foundry Thursday, October 23


The Louisiana Office of Tourism (remember this guy?) and Garden & Gun Magazine are teaming up with chefs Cory Bahr of Cottton restaurant in Monroe, La., and Tim Byres of Smoke/the Foundry for an epic Bayou party October 23. Barh cooks North Delta cuisine and was the 2012 Food Network Chopped! champion. Byres, of course, runs Smoke and won a James Beard Book Foundation award for his cookbook Smoke: New Firewood Cooking.

Billed as “Cotton & Smoke,  a celebration of Louisiana in Texas,” the outdoor party for 250 will offer plenty to eat and drink, plus some terrific live music by The Deslondes and Feufollet. The event runs from 7 p.m. till 10 p.m.

On the menu (which also includes adult beverages):

  • Grilled oysters with green tomato butter
  • Muscovy duck wraps with local honey
  • Smoked rabbit sausage, beer brined mustard & collard kraut
  • Upright roasted pork with Creole mustard & red chile vinegar
  • Pit smoked boudin links & kettle fried pork rinds with hot sauce
  • Brick roux gumbo with smoked chicken, shrimp & Andouille sausage
  • Grilled fish
  • Assorted Pickles
  • Dry sherry dirty rice dressing & parsley salad
  • Stewed collard greens smoked turkey, red chile & sorghum molasses
  • Dutch oven broiled hominy & cheddar cheese grits casserole
  • Charred cauliflower & pickled peppers
  • Caramelized pear & pineapple buckle, buttermilk ice cream
  • Homemade popsicles

About the bands:

The Deslondes, named after the street where they first wrote their songs, are a country-soul band from the Big Easy. Just back from a tour opening for Old Crow Medicine Show, the band draws inspiration from early Stax, Sun, and Atlantic records, combining them for a more raw, stripped-down sound.

Feufollet, hails from Lafayette, Louisiana, and is a force to be reckoned within the Cajun music industry. The band was nominated for a Grammy Award in 2010 for its album En Couleurs, and was proclaimed by Elvis Costello as “the most beautifully melodic album I’ve heard all year.” Their new album, Two Universes, is set to debut in early 2015.
