Hot Date: Abacus to host Red Mare wine dinner on Friday, January 23


<p style=”text-align: left;”>Kent Rathbun and his staff at Abacus are hosting a Red Mare wine dinner on Friday, January 23. The four-course pairing includes the debut of the California winery’s 2012 chardonnay. Jim Striegel of Red Mare will be there, leading a tasting of the winery’s cab, chard, sauv and rose.

6:30 p.m., $130 ++

Here’s the line-up:

 Passed Appetizers

             Kumquat tempura king crab with green chile sambal, crawfish handroll and ikura roe

             Domaine Chandon Étoile Rosé

             First Course

Smoked macadamia-crusted golden trout with caramelized leek-apple fritter and vanilla-pink peppercorn butter

Red Mare Sauvignon Blanc 2012

             Second Course

Crispy Niman Ranch pork cheek with truffled white bean puree, speck ham, asparagus and blood orange agrodolce

             Red Mare Chardonnay 2012

             Third Course

             Hickory grilled petite buffalo filet with candied root vegetable mash and sour cherry-fig glace

             Red Mare Cabernet Sauvignon 2011

             Fourth Course

             Dark chocolate-hazelnut devil’s food cake with milk chocolate feuilletine and blackberry caramel
