I got a sneak peek at chef John Tesar’s Knife Modern Steak last night. While Tesar wasn’t cooking the entire menu for this first run with his kitchen and server staff, there wasn’t a misstep in the dozen or so dishes I tried. Two standouts: the biggest, most tender and flavorful Colorado lamb chops this side of Colorado (Tesar cooks them sous vide then sears them over red oak coals), and a $26 prime sirloin cap steak that tasted every bit as good as a $60 ribeye. The opening date is still in flux, but I get the sense that May 19 seems like a reasonable target.
