Dallas chefs Dean Fearing, Eric Dreyer to represent US at Expo Milan World’s Fair in Italy


The top chefs at the restaurant Fearing’s in the Dallas Ritz-Carlton Hotel — Dean Fearing and chef de cuisine Eric Dreyer — have been tapped to represent Texas and southwestern cuisine at the James Beard American Restaurant and USA Pavilion at Expo Milan in Italy on July 31 and August 1. The Expo Milan world’s fair continues through the summer, with 145 nations participating to support the theme of “Feeding the Plant, Energy for Life.”

During the Expo, the duo joins other American chefs, including Norman Van Aken, Rick Bayless, Mary Sue Milliken, Ming Tsai, and Rick Moonen to present high-profile five-course dinners in official collaboration with the U.S. State Department, James Beard Foundation and International Culinary Center. The dinners operate in similar fashion to the dinner program at the James Beard House in New York City, serving as a culinary centerpiece for the Expo and as a showcase for American regional flavors, sustainable practices and culinary innovation.

The Fearing dinners on July 31 and August 1 will feature recipes from Fearing’s restaurant and cookbook, including his tortilla soup, BBQ shrimp tacos with mango/pickled red onions, chicken-fried Lockhart quail, bison tenderloin and a peach buckle with blackberry jam for dessert.
