EscapeHatch Copper River salmon story inspires Velvet Taco to run Copper River salmon taco as special

“Your Copper River stories got me thinking, why not create a CR salmon taco,” Velvet Taco chief chef John Franke just told me. “So starting Monday, we’re running an EscapeHatch Taco Special at Velvet Taco: Copper River salmon, herb marinated and grilled to order, topped with Thai basil crema, local arugula, red onions, Thai basil and grilled Texas peach salad. We’ll serve it inside a warm, hand-pressed blue corn tortilla made from Homestead Gristmill cornmeal.”
Some taco purists might scoff at the idea of a “taco” filled with Copper River salmon. Not me. Sounds like the best $6 taco in town.
