John Tesar is Expanding The Commissary to Preston Hollow and Fort Worth

John Tesar has big plans, including a Fort Worth Commissary

John Tesar‘s mind runs like an iPod shuffle with a broken pause button.

If you groove to his playlist, then that’s a good thing. If you hate his music, well, you’re gonna have to leave Dallas and Ft. Worth. Because he plans to broadcast his tunes all over both towns.

He’s just finished designing the menu for Chop House Burger in downtown Dallas, which opens in about two weeks.

Plus, there’s this: “I’m expanding the Commissary,” Tesar told me earlier this week, blueprints in hand. “I’m building two new Commissarys, one at Midway Road and Inwood Road, Northwest Highway in Dallas (which will  open in October or November), and the second, which we’ll open next January, will be in Fort Worth” in the new addition to Museum Place, at University and West Seventh, a few doors down from PrimeBar and across the street from Eddie V’s and the ne plus ultra boutique, Domain XCIV.

The new focus of the Commissary, according to Tesar, will be a “Johnny Rockets for adults. We want a family friendly feel, where families can get a great burger, great homemade shakes, great fries, but also beer and wine and be served by waiters.”

“We’ll use local pastured beef. We’ll bake our own buns, and we’ll continue to cook the burgers in the CVap (a temperature and humidity controlled oven that cooks a large quantity of burgers to a perfect medium rare temperature) then finish them to order.”

Tesar says until this opens,  he’ll focus his energy on these new Commissarys–and their new image–and leave the original intact…with a twist. At some future date, Tesar will turn over the operation of the One Arts Commissary to chef David McMillan, who runs Screen Door restaurant, also in One Arts.
