Peep the menu to Horseshoe Hill Cafe, new FW restaurant from chef Grady Spears, to open Wednesday, July 15
<span class=”bold”>Fort Worth’s true blue “Cowboy Chef,” Grady Spears, plans to debut his newest venture, a casual cowboy-themed restaurant in Fort Worth called Horseshoe Hill Cafe, this Wednesday, July 15, Spears tells EscapeHatch.
The tiny space is more cafe than fancy restaurant, says Spears, “a little place where we can serve chicken fried steaks with cracked pepper cream gravy and biscuits and cowboy cooking and even a little Tex-Mex” like chili con carne and enchiladas. Located on the edge of the Stockyards, Horseshoe Hill occupies a building more than a half-century old; “it’s perfect for what I want to do,” says Spears.
In addition to Horseshoe Hill, Spears says he’s also leased a larger venue nearby for private parties and has three new cookbooks in production.
I’m a big fan of Spears’ cooking. Though I’ve assisted in him in the kitchen more than once, I’ve never seen him measure or weigh a single ingredient. “It’s all feel,” he’s told me repeatedly.
